The Bactoferm ® range contains starter cultures for traditionally and fast fermented meat products.
The range also spans cultures for flavor and color enhancement and includes mold cultures for surface applications.
Bactoferm® TRADI 302 is a culture for production of traditionally fermented sausages. The culture gives a mild acidification and provides a good flavor and color development.
The culture is well-suited for all fermented sausages with or without mold inoculation.
Important: The culture does not ferment saccharose (sucrose) and lactose. It is therefore recommended to use glucose (dextrose) as carbohydrate source.

Directions for use
The contents of the pouch is added during grinding, cutting or blending early in the process together with other dry ingredients to ensure a homogeneous distribution.

Temperature: < -17 °C / < 1 °F
Shipment at ambient temperature.
For freeze-dried cultures at least 18 months when stored according to recommendations.
When stored at +5°C/ 41°F the shelf life is max. 6 weeks.
